雜果蛋糕

雜果蛋糕終于出場了。。。

06 年时做过 - 用 creaming method/Allrecipe 的方法。太干。不好吃。
07 放弃。
08 再战江湖 - 用 boiled Fruit Cake 的方法. 烘好后看起来很满意。味道呢,切片后才知道真的真的很美味。
食谱:
Boiled Fruitcake
3 1/2 cup dry fruit (I used raisin, gold raisin, seedless gold raisin, appricot, red cherries)
3/4 cup butter (170g)
1 cup milk (235ml)
1 teaspoon mixed spice (I used about 1/2tsp of each spices: cinnamon powder, all spice and nutmeg)
1/2 teaspoon baking soda (2g)
2 2/3 cups sifted self-rising flour (335g) (I used 22/3 cups all purpose flour with 2 tsp baking powder)
2 eggs
DIRECTIONS
Preheat oven to 325 degrees F (160 degrees C).
Line one 7.5 inches square tin with parchment paper (double layer).
In a medium saucepan, combine mixed fruit, sugar, butter, milk, mixed spice, and baking soda.
Bring to a boil, and simmer for 5 minutes.
Let the mixture cool to room temperature.
Stir in flour and eggs.
Pour into the prepared pan.
Bake at 325 degrees F (160 degrees C) for 60 minutes (My oven is very hot, so by this time the cake is done, 我的炉很热,这时候就好了).
Else, please reduce temperature to 300 degrees F (150 degrees C), and continue to baking cake for 1 1/2 hours.
Remove cake from oven, and allow to cool in the tin for 5 minutes.
Pour liquor/Rum/Brandy on the cake. (我用Whisky)
Wrap the cake while it is still warm (not hot) - I used baking paper to wrap and final layer with kitchen cloth. Keep in airtight tupperware.
(do not wrapped directly with aluminum foil, because alcohol can damage the foil).
