地瓜蛋糕 (2/19/09)
紫色地瓜还剩一小块,原本想要做个馒头来吃.
可是啊!懒得揉面,结果就烘简单的地瓜蛋糕/muffin
给楷儿和彦儿带去幼儿园的便当。
一个小小的紫色地瓜蛋糕和一盒美禄,就是他们的brunch了。
SWEET POTATO MUFFIN
1/2 cup and 1 tablespoon packed brown sugar
1/4 cup canola oil
1/2 teaspoon vanilla extract
1 eggs
1/4cup milk
1/2 cups smashed sweet potato
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon salt
1/4 cup brazil nuts
DIRECTIONS
Preheat the oven to 180 deg C.
Whisk together brown sugar, oil, vanilla, eggs and smashed sweet potato in a small bowl.
Mix together the flour, baking powder, spices, salt, and grated sweet potatoes in a large bowl. Make a well in the center, and pour in the egg mixture. Stir the egg mixture, gradually incorporating it with the flour mixture. Stir in the walnuts
Spoon the batter into the tins. I like to fill each tin to the rim to make a large cap.
Bake the muffins for 15 or until a toothpick inserted into the middle comes out clean.
